Hello everyone.
Today we are introducing a red wine from the Tuscan winery CIMA Cima.

Sangiovese 50%, Merlot 30%, Massaretta 20%
Like the white Chiave di Volta, it is the keystone of the winery.
Fermented in stainless steel for 3 weeks at controlled temperatures, aged in barrels for 6 months, and then aged in bottle for another 6 months. The wine is a brilliant ruby color with purple tints, violet and berry aromas, and the palate is balanced, fresh, and has a pleasant acidity and minerality. It is a perfect match for meat appetizers, fish soups, fresh cheeses, and salami.

The name Ankisi was taken from the initials of the children.
Fermented in stainless steel for 3 weeks at controlled temperature, then aged in barrique for 12 months. Then aged for another 6 months in bottle. Bright ruby color with aromas of violets and red fruits. Soft and concentrated, with a firm body rich in noble tannins. It will pair well with beef-based pasta, red meats, gibier, etc.

This grape variety has been cultivated on this land since ancient times and is their passion. The juice obtained from the destemming of the grapes is fermented at a temperature of 33°C (33°F), with skin contact, for about 20 days, and finally placed in small oak barrels. It is then aged in small oak barrels for about 12 months. The wine is then aged in small oak barrels for about 6 months.
The color is a concentrated ruby. The nose is delicate, with aromas of blue flowers, pretty berries, plum and tamarind. The palate is dry with fine, harmonious tannins. Fruitiness lingers on the palate. It would be good with eel, meat pasta, delicate red meats, fish soups, and fresh cheeses.
