Introduction of Wines Directly Imported from Milan ⑫
Closed today.
Hello everyone.
The five-day weekend is over, and it seems that the extension of the state of emergency declaration is inevitable. We regret to inform you that if the emergency is extended, we will have to ask you to cancel your reservation in accordance with the government's request.
Every time we call a customer who has already made a reservation to cancel it, we receive various comments from them. We have not always been able to do our best, but we have received many comments such as "Italian food is meaningless unless you dine with wine" and "We have our own reasons, so what can you do? We have also received many other words of encouragement and support. We are sure that we will receive many more comments from you, and we would like to share these valuable comments with our staff and use them to improve our service in the future.
Now, while we wonder when you will be able to enjoy these wines we are introducing in our restaurants, let us keep this feeling warm until the alcohol service resumes.
Today, as in the previous issue, we continue our introduction of Barolo producer Giovanni Sordo's winery.
BAROLO PARUSSI DOCG 2012
Barolo Palussi
Palussi is a vineyard in the shape of a gently sloping amphitheater on the Castiglione Falletto hill along the road to Alba.
This excellent location, also known as Sorito della sera, allows the grapes to receive more hours of sunlight, allowing the clusters to grow and ripen.
Wonderful garnet color and intensity. A great wine with great brilliance and concentration.
The nose is silky with very rich and persistent aromas. There is a sensation reminiscent of mint, sage and sweet spices.
On the palate, for all its rich alcohol content, it presents all its elegance, richness and balance in a warm and reserved state. The tannins are evident, but the balance of sweetness, acidity and flavor confirms that this is a wine intended to age for a long time. A first-class wine that gives unforgettable sensations and memories.
The tannins are distinct and smooth, but the acidity and flavor are well balanced. This makes the wine suitable for long-term aging.
BAROLO RAVERA DOCG 2012
Barolo Lavera
The original vineyards of this cru are located on a hillside in the warm southern part of the village of Novello. This area has always been positioned by the Novello wineries as one of the best vineyards for growing Nebbiolo.
The wine is striking in its ruby hue of intensity and extraordinary beauty, with a garnet color that stands out for its brilliance. The abundance of liquid tears and legs confirm the extraordinary greatness of this wine.
Very intense, expansive and persistent bouquet that recalls dried roses, mountain flowers and noble forest scents.
On the palate, the first thing that strikes you is the wonderful impression of balance and concentration. The tannins turn sweet and confirm all the essence of Nebbiolo. Then good acidity creates a pleasant wine. Aromatic persistence is long and mellow. The first impressions, encompassing warmth that leads to a great structure, and balance thanks to ripe tannins, are considered to be the essence of Nebbiolo. Soft, persistent aromas and excellent acidity make Lavera a pleasant and attractive wine.
That's all for today.
Thank you all for your continued support.
Please note that the Sabatini di Firenze Tokyo restaurant is still open and will not be serving alcohol.
