Today, we would like to introduce a Wagyu beef loin that is produced only in Kochi Prefecture. The Tosa Akashi is a rare breed of beef, a Kochi type of Japanese brown cattle, and only 1,600 head are raised, making it a very rare and valuable Wagyu beef.
The feature of this dish is its delicious lean meat. It is moderately marbled and has a good balance of fat and lean meat, which enhances the flavor of each.
For garnish, sauteed scamorza cheese and purple cabbage are vacuum-cooked and smoked, and purple cabbage powder adds color.
