Giuseppe Cocco, the maker of the pasta served in some of our courses, is a historic pasta brand that has been produced for over 100 years in Farra San Martino, a small town about 3 hours by car from Rome. It is known as the pasta that the papal court has been ordering.
The water quality of the Verde River, moistened by a natural spring, the low humidity characteristic of this region, and the constant windy climate make it possible to dry the pasta perfectly and to produce a unique pasta, which is still as delicious as ever, using traditional tools and techniques handed down over the years. The pasta-making techniques and traditional tools have been handed down over the years and are still producing the same delicious taste.
